© 2026 Crunchtime - All Rights Reserved | www.crunchtime.com | 2 Exclude Consumption in Net-Chef QuickStart Guide Overview Sometimes factors out of your control throw normal operations out of sync (e.g., an international sporting event, local festival, temporary roadwork blockages, or unexpected power outages). When these one-off events occur, your consumption and sales data are dramatically different than expected, creating extreme spikes or severe drops that do not represent your everyday business. If left alone, Net -Chef’s projected consumption and sales forecasts will incorporate these outliers, causing downstream issues for your store: • Skewed Recommended Orders : The system may recommend ordering too much inventory (causing high food waste, bloated inventory costs, and overcrowded shelf space) or too little (causing critical stockouts on key ingredients and frustrated guests). • Inaccurate Recommended Production : Your prep suggestions will not match actual demand, leading to food waste on over -prepped items or slow ticket times when staff are caught under - prepped. • Inaccurate Labor Scheduling : Projected sales and guest counts will be distorted, leaving your shifts over- or under-staffed. By managing Excluded Consumption, you flag these anomaly days. This instructs Net -Chef to ignore that specific day's data when calculating future sales forecasts and purchasing recommendations, ensuring your projections remain highly accurate. What Happens to Your Data? When you save an "Excluded Consumption" date, Net -Chef automatically adjusts how it handles that day's data behind the scenes: What IS Affected (Projections Ignore These Dates) • Projected Sales: This day's sales and item consumption are completely ignored for future baseline forecast calculations. • 4-Week Averages: If you exclude a specific Saturday, Net -Chef's 4 -week moving average calculation will skip that Saturday. It will seamlessly average the other 3 eligible Saturdays, preventing the outlier from artificially boosting or lowering your upcoming prep and order suggestions. • Year-over-Year (YoY) Trend Factors: The day is excluded from historical growth-rate calculations so it does not distort projections for the same period next year. What is NOT Affected (Financial & Audit Data Is Safe) • Raw Financial Data: Flagging a day as "Excluded" never deletes your raw data. Your actual sales, transaction counts, and guest counts remain safely stored for financial and auditing reports. It is only ignored for forecasting purposes.

Suggested Reason Outcome Unexpected Store Closure (e.g., power failure, severe plumbing leak, gas line issue) Yes "Power Failure - Closed at 1 PM" Prevents Net-Chef from assuming your demand has permanently dropped, avoiding under- ordering on your next critical purchase order. Severe Weather (e.g., blizzard, hurricane evacuation, extreme storm closing roads) Yes "Blizzard - Store Closed / Minimal Sales" Keeps your baseline normal. The system won't lower future recommended orders thinking you have lost customers. One-Off Local Festival / Event (e.g., hosting a block party, parade routing directly past your store) Yes "Downtown Parade Route Spike" Prevents the system from projecting inflated demand for the same weekday next month, saving you from severe waste on perishable prep. POS Sync Failure (e.g., duplicate sales files uploaded, or corrupt menu mix data) Yes "POS Data Sync Corruption" Protects forecast accuracy from corrupt or double-counted sales transactions until technical support resolves the upload. National Holiday (e.g., Thanksgiving, Christmas Day) No (Check with Corporate) N/A Net-Chef often has separate holiday planning profiles. Check your corporate guidelines before manually excluding scheduled holiday closures.
